Summer is winding down, and it’s nearly time for the kids to go back to school. But before that happens, my extended family has an annual family reunion. Despite the fact that fall is just around the corner, the weather is still hot and sunny. So I volunteered to bring a cool, summery dessert for the whole family to enjoy. I looked through my great grandmother’s recipe box and nothing seemed to fit. So I asked my mom and as always she had a fun and yummy recipe for a Watermelon Ice Cream Bombe.
It is super easy to make, and it only uses four ingredients. You can make it days ahead of time and leave it in your freezer until you need it. My family loved it, and I’m sure yours will also enjoy this clever play on a favorite summer melon.
National Cheesecake Day is this Saturday the 30th. What better excuse to enjoy a delicious dessert? In honor of summer, I made lime cheesecake with strawberry sauce and strawberries on top of course. I also diverged from the normal graham cracker crust and made mine with a yummy pretzel crust. It adds a nice sweet change with a hint a salt. The fresh lime taste in the cheesecake with the sweet strawberry sauce hits all the right notes for summer.
Cheesecake can seem a little intimidating but don’t let that stop you. This recipe isn’t difficult and is very worth the effort to make.
Only in Minnesota do you get weather that is a frozen tundra or a hot sauna in one year. This week we are experiencing ninety degree and above temperatures. That is much too hot for my family; so we will be in the air conditioning or at the beach. This is the land of 10,000 lakes and refreshing fun in the sun is never very far away, thankfully. But that does mean packing up all the summer essentials, but I didn’t have a beach bag…yet.
Most using things I already had around my house, I was able to make a great beach bag quickly, easily, and cheaply. I made a large bag so it will carry everything I need for a day at the beach. I even added pockets to keep everything neat and organized.
I hope you have had a great summer so far. It’s hard to believe that we are nearly halfway through summer vacation. But thankful there is still plenty of summer left to enjoy. I’ve been enjoying time outside and time with my family, and I’m always on the lookout for new things that will help my summer go even better. With help from my sweet mom, I was able to whip up some lemon icing as well, and they turned out so yummy. I brought them to a picnic and everyone happily ate them up. These lemon cookies are very easy and quick to make, which is great of busy summers.
