And making s’mores is one of the best ways to savor summer. Hello, isn’t summer just flying by. I can’t believe it’s already the end of July. But there is still plenty of fun and sunshine. Our extended family has decided to get together once a month throughout the summer for dinner and a bonfire. It’s great to stay in touch over the busy summer months and enjoy each other’s company. Everyone brings something to share. So I decided to raid the recipe box again. I found a simple recipe for a delicious jam cake.

Happy (nearly) 4th of July! This year it’s a little odd that the 4th is on a Tuesday. While you are soaking up the sun, keep your kids entertained with bubbles. This week I created a bubble wand and some bubble solution you can enjoy with your family.
Using a dowel rod and some cotton yarn, you can create a wand for making lots of bubbles. The single handed design makes it easy to walk around and create bubbles. Creating a web of loops in your bubble wand makes it easier to create bubbles. Which makes this project great to do with your kids. And they will have a blaster making bubbles with their own bubble wand.
One of the best things about the end of summer here is the Minnesota State Fair. Otherwise known as the “Great Minnesota Get Together”. Through the twelve days of the fair, there are animals, concerts, activities, and lots of food. You can pretty much find anything on a stick and many things deep fried. Most Minnesotans eat their way through the fair walking it off as they go. I must confess I am one of these people. French fries, cheese curds, and all you can drink milk for $2 are always on my list of what to eat. Also on my food list are deep fried Oreos® and funnel cake. So yummy!

Summer is winding down, and it’s nearly time for the kids to go back to school. But before that happens, my extended family has an annual family reunion. Despite the fact that fall is just around the corner, the weather is still hot and sunny. So I volunteered to bring a cool, summery dessert for the whole family to enjoy. I looked through my great grandmother’s recipe box and nothing seemed to fit. So I asked my mom and as always she had a fun and yummy recipe for a Watermelon Ice Cream Bombe.
It is super easy to make, and it only uses four ingredients. You can make it days ahead of time and leave it in your freezer until you need it. My family loved it, and I’m sure yours will also enjoy this clever play on a favorite summer melon.
National Cheesecake Day is this Saturday the 30th. What better excuse to enjoy a delicious dessert? In honor of summer, I made lime cheesecake with strawberry sauce and strawberries on top of course. I also diverged from the normal graham cracker crust and made mine with a yummy pretzel crust. It adds a nice sweet change with a hint a salt. The fresh lime taste in the cheesecake with the sweet strawberry sauce hits all the right notes for summer.
Cheesecake can seem a little intimidating but don’t let that stop you. This recipe isn’t difficult and is very worth the effort to make.
Only in Minnesota do you get weather that is a frozen tundra or a hot sauna in one year. This week we are experiencing ninety degree and above temperatures. That is much too hot for my family; so we will be in the air conditioning or at the beach. This is the land of 10,000 lakes and refreshing fun in the sun is never very far away, thankfully. But that does mean packing up all the summer essentials, but I didn’t have a beach bag…yet.
Most using things I already had around my house, I was able to make a great beach bag quickly, easily, and cheaply. I made a large bag so it will carry everything I need for a day at the beach. I even added pockets to keep everything neat and organized.
I hope you have had a great summer so far. It’s hard to believe that we are nearly halfway through summer vacation. But thankful there is still plenty of summer left to enjoy. I’ve been enjoying time outside and time with my family, and I’m always on the lookout for new things that will help my summer go even better.
