Good morning all! Can you believe Easter is only two weeks away? The entire weekend is going to be chalk full of activities and family time. I have such fund memories of Easter growing up. The whole family would get together at my grandmother’s house at church. First we’d have an Easter egg hunt, then Sunday lunch, and finally a jelly bean hunt before sitting down to visit and play games. As you can imagine, Easter usually lasts all day for our family. So this year I thought I would bring a fun dessert for everyone to enjoy. After looking through my great grandmother’s recipe box, I found a yummy recipe for carrot cake. To make it a special treat I made an Easter egg shaped carrot cake.
This egg shaped cake is actually easy to make and only uses one batch of carrot cake batter. The allspice instead of nutmeg is a nice change and doesn’t overwhelm the cake. Your family will adore and devour this delicious carrot cake this Easter.
Welcome back! I hope you had a fantastic holiday weekend with your family and friends. My family had a great Christmas. Guess what I got for Christmas…a new mixer! It looks beautiful, works beautifully, and is now proudly displayed on my kitchen counter. The new mixer has already come in handy with making dessert for New Year’s Eve. As the holiday bustle is still calming down, I decided to make something easy, mini lemon cupcakes with lemon buttercream frosting.
Since Christmas is filled with chocolate and gingerbread, I wanted something light and fresh for a New Year’s Eve party. Adding some cracking candy gives these delicious mini desserts even more pop! It makes a great dessert for your New Year’s bash.
The other day I forgot my cellphone at home when I went out to supper with my parents. It felt so strange being disconnected from…everything. My mom also forgot her cell phone as did my dad, and we all felt kinda odd. Granted we were just out for dinner, but still I actually wondered what I would do if I had some free time on my hands without my phone. Heaven forbid I just sit back and relax! 😉
March 4-5 is National Day of Unplugging, that means no cell phone for as long as you can hold out. I know my family has a hard time getting off their phones even to enjoy dinner together. I think I’m going to implement a sort of cell phone tower strategy.
The idea is that everyone piles their cell phones on top of each other on the table and the first one to cave and grab their cell phone has to clear the table and do the dishes. I’ve heard of something similar when going out to dinner with friends and the one who grabs their cell has to pay the bill. Both of those consequences seem like enough motivation to disconnect from a cell phone and reconnect with loved ones.
While participating in National Day of Unplugging, I think I’ll do some baking. And why not use a recipe from a nearly technology free era? I dug through my great grandmother’s recipe box and came across her recipe for French Coffee Cake. This will be a great reward for my family at the end of our day of unplugging.
I did a trial bake and it turned out delicious! Everyone is going to need a reward for unplugging and this delightful coffee cake is perfect.
