Hello everyone and hello summer! Okay while it isn’t technically summer yet, the weather would indicate otherwise. It has been glorious outside. This time of year always reminds me of making strawberry jam with my mom. The smell of the jam wafting through the house. She would even let me lick the spoon when everything was done. Serious I could have licked the mixing bowl clean. Homemade jam is amazing! Just thinking about it really triggers a craving for strawberries. So I decided to delve into my recipe stash, and I came up with a recipe for strawberry bread.
This sweet bread is a delightful dessert or a perfect mid-afternoon snack. Using frozen strawberries and a longer baking time, you get bursts of strawberry flavor. The sweet cinnamon throughout the rest of the bread is the perfect pairing to this yummy loaf. This is definitely a dessert everyone will everyone and it’s wonderful to have on hand for hungry kids.
The ingredients you will need for this strawberry bread are:
- 2 – 10 oz. packages of frozen strawberries
- 3 cups of flour
- 2 cups of sugar
- 1¼ cups of vegetable oil
- 4 eggs
- 3 teaspoons of cinnamon
- 1 teaspoon of baking soda
- 1 teaspoon of salt
I really love this recipe and not only because it is delicious. This bread is really easy to make and uses ingredients that are already on hand. While frozen strawberries aren’t something I usually have, I can easily stock my freezer with them. That way I can whip up this sweet loaf whenever I feel like it.
Start by preheating your oven to 350°. Then mix all the dry ingredients together in a large bowl. Give it a good stir so it is well combined and set aside.
In another large bowl, stir together the strawberries, eggs, and vegetable oil. Once the strawberries are well coated and everything is combined, stir the strawberries and flour mixture together. This is a little hard to stir since the frozen strawberries will start to thicken the dough. But keep at it until the bread dough is thoroughly combined.
Grease two loaf tins well. Pour the dough into the tins and place in the oven for 1 hour or until it is done. After you take them out of the oven, let them sit in the loaf tins for about 10 minutes. Then you can carefully remove them from the tins and let cool completely.
It’s so simple and one of my shortest recipes. I just had to cut off a slice and try it once it’s done. Because it is simply delicious. The sweetness of the cinnamon and the bursts of strawberry goodness are wonderful. You must try some. I’d share mine with you, but unfortunately food teleportation is not possible yet. You’ll just have to make your own. But trust me, your family will thank you for it if you manage to share some. So yummy!
