Good chilly morning everyone! Winter weather has been especially cold and unpredictable this year. The only thing for it is to bundle up on the couch with some ice cream… Okay so that does seem strange, but studies have shown that Americans eat more ice cream in winter than in the summer. Perhaps it’s an unusual nostalgia for summer. Well if you are going to be snuggling with your loved ones, why not treat them to a delicious s’more sundae.
An easy graham cracker ice cream with a gooey brownie make this s’more sundae something to savor. The warm chocolate and the cold sweet ice cream are the perfect combination. Whether you are in love with s’mores or need a divine dessert for Valentine’s day, you will love it.
To make this s’more sundae, begin by mixing the graham cracker ice cream.
For this absolutely yummy ice cream you will need:
- 1-2 packages of graham crackers
- 1.5 quarts of french vanilla ice cream
- 1 teaspoon of cinnamon
I added 2 packages of graham crackers to my ice cream, but if you want a little less graham cracker flavor just add in one package. It’s so easy to make this ice cream just want you want it. Just vary the ingredients until you find the perfect combination for you.
Now you will need the ice cream to be pliable. I left my ice cream in the fridge for a half hour before I started mixing. But if you are in a rush, you can place it in the microwave and heat it for ten seconds at a time until it’s pliable.
Next crush your graham crackers into a fine dust in a blender or food processor, whichever you happen to have on hand. Scoop the softened ice cream into a metal bowl. Mix in the graham cracker dust and cinnamon until everything is thoroughly combined. Then cover it with foil and stick the ice cream mixture back in the freezer. So the ice cream is nice and frozen for your s’more sundae.
Next it’s time to make the brownies for this sundae.
You will need:
- 3/4 cup cocoa
- 2/3 cup shortening
- 2 cups sugar
- 4 tbsp oil
- 4 eggs
- 1 tsp vanilla
- 1¼ cups flour
- 1 tsp baking powder
- 1 tsp salt
These brownies are perfect for this s’more sundae. They are rich, chocolaty, and gooey; so delicious!
First you will need to preheat the oven to 350°. Then cream together the cocoa, shortening, sugar, and oil.
Next mix in the eggs and vanilla until thoroughly combined. Add in the baking powder, salt, and flour. I would recommend gradually mixing in the flour as it tends to go everywhere if you add it in all at once. Once everything is mixed together, grease a large pie pan and pour the brownie mixture into it. Bake at 350° for 40-45 minutes. Because you are using a pie pan instead of the standard 13 x 9 baking tin, these brownies need a little longer in the oven than usual.
Pull out of the oven and let the brownies cool for a bit. Then you can cut the brownies into wedges and top with your graham cracker ice cream and some mini marshmallows.
And voila! You have a delicious s’more sundae that your whole family will love. The rich gooey brownie paired with the graham cracker ice cream is all the s’more goodness you want. The graham cracker ice cream is some of the best ice cream I have every tasted. Graham crackers and ice cream just might be have to be on my grocery list regularly.
