Peppermint Cream with Chocolate Wafers
Blending mint, cream, and chocolate, this refreshing dessert is sure to be a holiday favorite.

Finely crush 1/2 pound of peppermint candies in a food processor.
In a double boiler, combine 1/2 cup of half and half with crushed candy.
Cook candy mixture until melted completely, stirring regularly.
Add 1 tablespoon of cold water to unflavored gelatin to soften.
Add softened gelatin to melted candy.
Pour candy mixture into a large bowl and chill for about an hour until mixture is partially set.
Using a standing mixer, whip 1-1/2 cups of heavy cream until it forms stiff peaks.
Gently fold whipped cream into partially set candy mixture until completely combined.
In a glass 8×8 baking pan, place a layer of chocolate wafers on the bottom of the dish.
Break chocolate wafers in half and place around the sides of the dish.
Pour half of the candy mixture into the 8×8 dish and spread evenly around the pan.
Place a layer of chocolate wafers on top of candy mixture.
Pour the rest of the candy mixture over chocolate wafer layer and spread evenly.
Chill for at least 8 hours in refrigerator and then enjoy.
