Turning Original Butterscotch Brownies into Espresso Chocolate Chip Blondies

Hello everyone! I hope you are having a fantastic day so far. The Easter holiday with my family was wonderful, but I’m glad to get back to normal. Of course normal means I don’t really have a theme for my bakes. So I headed to my great grandmother’s recipe box again for something delicious. She had two recipes for butterscotch brownies that were exactly the same, but by two different people. If school taught me anything it’s that when the teacher repeats something it is important, and probably on a test. I decided to do a little test of my own by turning the original recipe into something even better. With a bit of experimenting, I created a recipe for espresso chocolate chip blondies.

Espresso Chocolate Chip Blondie Recipe

Experimenting with food and flavors is always fun. This time I’ll share great grandmother’s original butterscotch brownies and my espresso chocolate chip blondies. They both turned out deliciously. So why not try them both and decide which is the best butterscotch brownie recipe?

First we will start out with the original butterscotch brownie recipe.

Great grandmother’s recipe calls for:

  • 1½ cups brown sugar
  • ½ cup butter
  • Egg
  • 1¼ cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Classic Butterscotch Brownie Recipe

Her recipe just says to mix everything together and pop it in the oven at 350° for 25 minutes.

But I think it’s best to cream the butter and brown sugar together. Then you can add the egg and mix thoroughly. Finally add the flour, baking soda, salt, and vanilla and mix until completely combined. Grease and flour an 8″ x 8″ baking tin and bake at 350° for 25-30 minutes.

Quick, easy, and delicious, just the way I like my desserts, especially when I’m in a hurry for something sweet. But I was carving something a little different. Coffee and chocolate go together wonderfully, but for once I didn’t want a ton of chocolate. Shocking isn’t it! 😀 So I decided to experiment with coffee and chocolate chips.

The resulting espresso chocolate chip blondies have a nice coffee flavor with bits of gooey chocolate goodness.

To make these yummy treats you will need:

  • 2 cups brown sugar
  • ½ cup unsalted butter (melted)
  • 2 eggs
  • 1¼ cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 teaspoons instant espresso powder
  • ½ cup chocolate chips

I wanted my blondies to be not quite as dense so I add another egg to my recipe. I also added more sugar to balance the espresso I added.

To make these blondies start by preheating your oven to 350°. Then start creaming the butter and brown sugar together. At this stage you need to add the espresso powder. This will help the powder dissolve a bit and thoroughly mix into the blondie batter.

Espresso Chocolate Chip Blondies

Next add the eggs and mix completely. Then you need to add the flour, and while you are mixing add in the vanilla. Once that is thoroughly mixed together, stir in the chocolate chips. When everything is combined, pour batter into a 8″ x 8″ pan. Since my pan was glass, I just lightly greased it.

Bake for 25-30 minutes at 350° and voila! You have a delicious dessert.
