Hello there! Summer is definitely here according to the weather if not the calendar. I have turned on the air conditioning in my home while the oven is only used when absolutely necessary. With Father’s Day coming up, it’s going to be necessary. But who wants to bake in ninety degree weather? Not me. So this year I want to keep the baking quick not to mention easy. In my vintage recipe box, I found a recipe for peach pie. My dad loves peaches, and the recipe was really easy. So it is perfect for Father’s Day.
Using premade pie crust and frozen peaches makes this pie a snap to make. The rich cream and cinnamon filling is delicious and versatile. Just switch out the peach for apples, pears, or whatever fruit you want for a delicious pie in no time.
To make a delicious peach pie for your family, you will need:
- 2 premade pie crusts (They usually come in a pack of two in the refrigerated section.)
- 1 bag of frozen peaches
- 1¼ cups heavy whipping cream
- 1 cup sugar
- 4 tablespoons flour
- 1 teaspoon cinnamon
That’s all. A whopping five ingredients to make this yummy pie. If you want to make your pie crust from scratch you certainly can. But I’m not quite that skilled at baking so I went the easy route. 🙂
Start out greasing a pie dish.
Place one of the pie crusts into the dish. Press the crust into the dish and along the edges. Pour the peaches into the pie crust while they are still frozen. I used the entire bag of frozen peaches to pack the pie with peachy goodness. But if you prefer less fruit in your pie that is just fine. It is completely up to you.
Next you need to whip up the creamy filling.
Mix together the sugar, flour, cinnamon, and cream until thoroughly combined. Pour mixture over the peaches. Make sure that the peaches are mostly covered.
Then comes the top.
You can create a lattice on top, leave the crust plain, or cut out cute shapes. I made little fish using a small oval cookie cutter and a knife. My dad loves to fish so I thought this was the perfect Father’s Day touch. Unfortunately I did not center my design very well. So it is a little off, but I’m sure dad won’t mind. 🙂
Place the pie crust on top of the pie and press the edges together all the way around. I trimmed my exceed crust before baking because I hate waste. This did cause the top to shrink away from the bottom crust a little. So while it doesn’t look perfect it does still taste divine.
Finally bake in a 375° oven for 40-50 minutes or until the crust is golden brown. Let it cool and enjoy with some whipped cream. Yummy!
And it tastes as good as it looks! As I mentioned before, if peaches aren’t your favorite you can switch them for whatever fruit you prefer. The creamy, cinnamon filling goes well with apples, pears, or pretty much any other fruit. My dad loves peaches so this recipe is perfect the way it is.
