Cereal Treat Clover for St. Patrick’s Day

Good day everyone! I hope you are still soldiering on well through this crazy winter. The dip back down well below freezing is quite unwelcome. But I suppose it is just March and could be a whole lot worse. One thing to be excited about in March is St. Patrick’s Day, which is tomorrow! To celebrate St. Paddy’s Day on such short notice, I created this delicious cereal treat in the shape of a clover.

This festive dessert is quick and easy to make. With just a few ingredients and some cookie cutters you can make this delightful cereal treat. It was the talk of our party and I’m certain your guests will love it too.

What you need to make your cereal treat clover is:

Ingredients - Cereal Treat Clover

  • 6 cups crispy rice cereal
  • 2 cups cereal with marshmallows
  • 8 cups of mini marshmallows
  • 4 tablespoons butter
  • Green food coloring
  • Large heart shaped cookie cutter
  • Small/medium heart shaped cookie cutter
  • Wax paper or baking parchment
  • Microwave safe mixing bowls
  • Spatula

So the photo has two sticks of butter, but you only need about a half a stick. Honestly I thought I was going to need more. So I hope you will forgive the photo. Now that has been addressed, let’s make a big cereal treat clover.

Making Green Cereal Treats

It’s possible to make all the green cereal treat mix at the same time. But I found it more pliable to make it in two separate batches.

Start by melting 3 cups of mini marshmallows with 1½ tablespoons of butter in a large microwave safe bowl. Pop it in the microwave for a minute or less at a time until melted. Make sure to stir marshmallows in between microwaving. Once it’s all melted add 4-6 drops of green food coloring. You can adjust how many drops depending on the green hue you want. Stir until color is thoroughly mixed. Then mix in 3 cups of crispy rice cereal and stir until well combined.

Next you will shape the base of the clover.

Making Base of Cereal Treat Clover

Lay a large piece of wax paper or baking parchment on a clean surface. Grease the large heart cookie cutter and place on the paper. Scoop the green cereal mixture into the cookie cutter and press into place with a spatula.

Carefully lift the cutter off and repeat with the next three to make the clover shape.

Once you are done with the base make another batch of green crispy rice following the steps above.

The next step gets a little tricky but it’s worth it!

Making Green Cereal Clover Walls

Place the large cookie cutter back on one of the clover “leaves”. Then place a smaller heart shaped cutter in the center of the “leaf”. Packing the cereal mixture gets a little tricky. You need to lift the large cutter off the paper to get a tall border around the small cutter. Once you get some of the mixture packed into place the large cutter should stay up on its own. Once you have packed the mixture around the small cutter, remove it to reveal a heart shape inside the “leaf”.

This is the base for the awesome effect when it’s completed. Repeat those steps with the other three “leaves”.

Next you are going to create the cereal filling for the clover “leaves”.

Filling Clover with Marshmallow Cereal

Melt 2 cups of mini marshmallows with 1 tablespoons of butter in a medium microwave safe bowl. Pop it in the microwave for a minute or less at a time until melted. Make sure to stir marshmallows in between microwaving.

Let the melt marshmallow cool for like half a minute so the marshmallows in the cereal don’t melt on contact. Stir in the cereal until well mixed. Scoop out a bit of cereal mixture at a time and press into heart shaped holes in each “leaf”.

The only thing that’s left to do is enjoy it!

Finished Rice Crispy Cereal Cover

Although the three leaf shamrock is the symbol of St. Patrick’s Day and not the four leaf clover, this delicious treat looks festive to me. It turned out simply adorable. Everyone at my party absolutely loved not only looking at it but eating it as well. You can’t go wrong with a good cereal treat.

  1. Melt 3 cups of mini marshmallows with 1-1/2 tablespoons of butter in a large microwave safe bowl. Microwave marshmallows for a minute at a time until melted; stirring in between.
  2. Add 4-6 drops of green food coloring and stir until melted marshmallows are thoroughly green.
  3. Stir in 3 cups of crispy rice cereal until well coated.
  4. Place a greased, large heart shaped cookie cutter on a large piece of wax-paper or baking parchment.
  5. Scoop green crispy rice mixture into cookie cutter and flatten with spatula. Repeat for three other "clover leaves".
  6. Repeat steps 1-3.
  7. Place large cookie cutter over one cereal "clover leaf" and place a smaller heart cookie cutter in the center of the "leaf".
  8. Scoop green cereal mixture into large cutter and press in and around smaller cutter. Once packed remove smaller cutter. Repeat with the three other "leaves".
  9. Melt 2 cups of mini marshmallows with 1 tablespoon of butter in a medium microwave safe bowl. Microwave marshmallows for a minute at a time until melted; stirring in between.
  10. Stir in 2 cups of cereal with marshmallows until well coated.
  11. Scoop cereal mixture into each heart shaped hole and press into place with a spatula.
