Peanut Butter Waffles with Bonus DIY Tablecloth for Special Occasions

Fall is on it’s way! And so is the new school year. I just love the feel of new school supplies. When I was young, I would prepare everything for the new year right after the shopping trip. This was usually several weeks in advance. Such fun memories. Soon it will be time for routines, No. 2 pencils, and lunch boxes. In the back to school spirit, I decided to turn the classic PB&J sandwich into peanut butter waffles with jelly and whipped cream. As a bonus I decided to include a DIY this week that makes birthdays and other celebrations even more special.

Turning Original Butterscotch Brownies into Espresso Chocolate Chip Blondies

Hello everyone! I hope you are having a fantastic day so far. The Easter holiday with my family was wonderful, but I’m glad to get back to normal. Of course normal means I don’t really have a theme for my bakes. So I headed to my great grandmother’s recipe box again for something delicious. She had two recipes for butterscotch brownies that were exactly the same, but by two different people. If school taught me anything it’s that when the teacher repeats something it is important, and probably on a test. I decided to do a little test of my own by turning the original recipe into something even better. With a bit of experimenting, I created a recipe for espresso chocolate chip blondies.

Espresso Chocolate Chip Blondie Recipe

Experimenting with food and flavors is always fun. This time I’ll share great grandmother’s original butterscotch brownies and my espresso chocolate chip blondies. They both turned out deliciously. So why not try them both and decide which is the best butterscotch brownie recipe?

Overnight Oatmeal Cookies with Molasses and Lemon

Hello everyone! We are more than halfway through January. Isn’t that crazy?! New Year’s Eve seems like it was just last week and also months ago. How are you doing on your New Year’s resolution? My resolutions have been a mixture of successes and fails, but I’m still going which is the most important thing. One of the things I’ve been craving is cookies. There is nothing quite like having a warm cookie with a hot cup of tea on a snowy January day. I decided to having a small cookie was better than being so fixated on cookies that I end up eating my way out of a bag of Oreos. My great grandmother’s recipe box came to my aid with a delicious recipe for overnight oatmeal cookies.

This recipe does require chilling the dough overnight, but the promise of warm oatmeal cookies is more than enough. Both molasses and lemon zest go into these yummy little cookies giving these traditional cookies an unconventional twist. You’ll love nibbling on these oatmeal cookies with a nice hot cup of tea some cold winter day.

Chocolate Mocha Cake Recipe with Fudgy Frosting

Finally it’s starting to feel like fall and it’s perfect weather for a nice hot beverage. So it’s perfect that today is national coffee day and national mocha day. While pumpkin spice has invading coffee shops across the country, I still prefer traditional chocolate mochas and dessert. So I decided to make a chocolate cake from my great grandmother’s recipe box with a coffee twist.

Brown Sugar Oatmeal Cookies

So have you made plans for a summer road trip yet? Plans have been popping up in my mind, but nothing is on the calendar yet. To prepare for impending summer trips, I’ve been thinking of possible homemade treats to take along. The bacon snack mix that I made a while back is a great salty snack for road trips. But I also like something sweet to munch on as well, like cookies.

I turned to my trusty and slightly rusty recipe box for an easy and sweetly delicious snack for the road. I found a recipe for brown sugar oatmeal cookies.

Brown Sugar Oatmeal Cookies

Okay actually they are called “Aggression Cookies”, which sounds like they would be difficult to make. But these cookies are really easy to make. This recipe does require kneading so the cookie dough is good to vent any aggression on.

Brown sugar oatmeal cookies is a more suitable name for these yummy treats. You can also add chocolate chips to these cookies which makes them even better in my opinion. For me chocolate makes almost everything better. These cookies are really easy to make and will be gratefully devoured by your family.

Unplug and Bake French Coffee Cake

The other day I forgot my cellphone at home when I went out to supper with my parents. It felt so strange being disconnected from…everything. My mom also forgot her cell phone as did my dad, and we all felt kinda odd. Granted we were just out for dinner, but still I actually wondered what I would do if I had some free time on my hands without my phone. Heaven forbid I just sit back and relax! 😉

March 4-5 is National Day of Unplugging, that means no cell phone for as long as you can hold out. I know my family has a hard time getting off their phones even to enjoy dinner together. I think I’m going to implement a sort of cell phone tower strategy.

The idea is that everyone piles their cell phones on top of each other on the table and the first one to cave and grab their cell phone has to clear the table and do the dishes. I’ve heard of something similar when going out to dinner with friends and the one who grabs their cell has to pay the bill. Both of those consequences seem like enough motivation to disconnect from a cell phone and reconnect with loved ones.

While participating in National Day of Unplugging, I think I’ll do some baking. And why not use a recipe from a nearly technology free era? I dug through my great grandmother’s recipe box and came across her recipe for French Coffee Cake. This will be a great reward for my family at the end of our day of unplugging.

I did a trial bake and it turned out delicious! Everyone is going to need a reward for unplugging and this delightful coffee cake is perfect.
