Good morning all! Can you believe Easter is only two weeks away? The entire weekend is going to be chalk full of activities and family time. I have such fund memories of Easter growing up. The whole family would get together at my grandmother’s house at church. First we’d have an Easter egg hunt, then Sunday lunch, and finally a jelly bean hunt before sitting down to visit and play games. As you can imagine, Easter usually lasts all day for our family. So this year I thought I would bring a fun dessert for everyone to enjoy. After looking through my great grandmother’s recipe box, I found a yummy recipe for carrot cake. To make it a special treat I made an Easter egg shaped carrot cake.
This egg shaped cake is actually easy to make and only uses one batch of carrot cake batter. The allspice instead of nutmeg is a nice change and doesn’t overwhelm the cake. Your family will adore and devour this delicious carrot cake this Easter.

Otherwise I highly recommend planning a lovely night in, which is what my family and I do every year. It’s less of a headache for everyone. This year I wanted to bake a special treat for everyone. Not everyone loves chocolate as much as I do, but we all love cinnamon rolls and cinnamon roll inspired treats. To keep with the Valentine’s Day theme, I created these delicious cinnamon twist pastry hearts.
These pastry hearts might look complicated, but with pre-made pastry sheets these tasty treats are easy to whip up. The rich cinnamon and brown sugar swirled throughout is so delicious. If you take it a step further and create the pink cream cheese frosting it’s like eating the middle of a cinnamon roll, which is the best part. 😀
Welcome back! I hope you had a fantastic holiday weekend with your family and friends. My family had a great Christmas. Guess what I got for Christmas…a new mixer! It looks beautiful, works beautifully, and is now proudly displayed on my kitchen counter. The new mixer has already come in handy with making dessert for New Year’s Eve. As the holiday bustle is still calming down, I decided to make something easy, mini lemon cupcakes with lemon buttercream frosting.
Since Christmas is filled with chocolate and gingerbread, I wanted something light and fresh for a New Year’s Eve party. Adding some cracking candy gives these delicious mini desserts even more pop! It makes a great dessert for your New Year’s bash.
Thanksgiving is just one week away, and I’m so excited. It’s always lovely to gather with friends and family to enjoy the day. When the extended family gets together, it’s a big group. Everyone brings a dish or two to share. This year all of the main dishes have been assigned so I decided to make a dessert. But I still wanted the dessert to be inspired by Thanksgiving. Sweet potato casserole is a Thanksgiving essential on many tables, especially in the south. Taking that as my inspiration, I created a delicious and unexpected dessert that everyone will enjoy: sweet potato muffins with toasted marshmallow icing.
The mellow sweetness of the sweet potato is a perfect harvest flavor. The slightly toasted marshmallow adds a bit of sweet whimsy to these muffins. There have already been rave reviews from my family for these sweet potato muffins. I am certain they will be a big hit at any Thanksgiving gathering.
One of the best things about the end of summer here is the Minnesota State Fair. Otherwise known as the “Great Minnesota Get Together”. Through the twelve days of the fair, there are animals, concerts, activities, and lots of food. You can pretty much find anything on a stick and many things deep fried. Most Minnesotans eat their way through the fair walking it off as they go. I must confess I am one of these people. French fries, cheese curds, and all you can drink milk for $2 are always on my list of what to eat. Also on my food list are deep fried Oreos® and funnel cake. So yummy!
I wanted to be able to enjoy and share a sweet, fair treat throughout the year. So I decided to not only make these desserts but combine them into a decadent dessert. This recipe for Cookies ‘N Cream Funnel Cake is a sweet tribute to delicious the State Fair food.
These are actually easy and quick to make. Depending on how big you like your funnel cakes, this recipe will make a enough for at least 4 people and easily 6 people. The crushed chocolate cookies in this funnel cake adds yummy, rich flavor.
The sun is shining and the weather has been steadily heating up so far this summer. I wish we had a pool but thankfully in Minnesota a beautiful lake is usually not too far away. I’m looking forward to sitting on the beach or in the backyard enjoying a cool glass of lemonade. It doesn’t get much more summery than that. Until I get a relaxing afternoon outside, I really want to make something sweet, lemony, and delicious. In my vintage recipe box I found a great recipe for lemon cookies.
With help from my sweet mom, I was able to whip up some lemon icing as well, and they turned out so yummy. I brought them to a picnic and everyone happily ate them up. These lemon cookies are very easy and quick to make, which is great of busy summers.
Easter is this weekend! I can hardly believe it. I have my table decorations planned (more or less). The main menu is set and the food is brought for Easter lunch. My family and friends are confirmed for Sunday. So what’s left? Well, I think I need a little something sweet to finish off lunch or even to enjoy while visiting with everyone. My oven will probably be working overtime on Sunday morning and the more I can get done before Sunday the better.
I began looking through my great grandmother’s recipe box again and found she was quite the candy maker. I have made cakes, pies, bars, and brownies, but I have never tried making candies before. Trying to make something as potentially disastrous as candy right before a holiday usually is not a wise idea, but I tend to jump into things head first. 😉
Fortunately for me, my great grandmother actually has an easy candy recipe: Chocolate Covered Mints.
Chocolate: yes please! Lots of sugar: why not? Mint: perfect for after lunch! This recipe is perfect find for my Easter table. To make them even more festive, I decided to dye the mint centers in fun Easter colors. It creates a cheerful surprize when they are bitten into.

The other day I forgot my cellphone at home when I went out to supper with my parents. It felt so strange being disconnected from…everything. My mom also forgot her cell phone as did my dad, and we all felt kinda odd. Granted we were just out for dinner, but still I actually wondered what I would do if I had some free time on my hands without my phone. Heaven forbid I just sit back and relax! 😉
March 4-5 is National Day of Unplugging, that means no cell phone for as long as you can hold out. I know my family has a hard time getting off their phones even to enjoy dinner together. I think I’m going to implement a sort of cell phone tower strategy.
The idea is that everyone piles their cell phones on top of each other on the table and the first one to cave and grab their cell phone has to clear the table and do the dishes. I’ve heard of something similar when going out to dinner with friends and the one who grabs their cell has to pay the bill. Both of those consequences seem like enough motivation to disconnect from a cell phone and reconnect with loved ones.
While participating in National Day of Unplugging, I think I’ll do some baking. And why not use a recipe from a nearly technology free era? I dug through my great grandmother’s recipe box and came across her recipe for French Coffee Cake. This will be a great reward for my family at the end of our day of unplugging.
I did a trial bake and it turned out delicious! Everyone is going to need a reward for unplugging and this delightful coffee cake is perfect.
Fall is well underway, and I want to savor every minute of it. But fall wouldn’t be fall without warm and delicious treats!
So I decided to bake up something seasonal and delicious. And the thing that is screaming fall right now is apples.
Did you know that October is National Apple Month? With apple orchards within five minutes, the siren’s apple call cannot go unnoticed.
Answering the call, I headed over to a local orchard and grabbed a bunch of delicious apples.
Then I turned to an old recipe box that has been passed down to me. I’m not sure where I received the recipe box from, but inside I came across a recipe clipped from a newspaper from the late 1970’s I believe: neither the date or the newspaper name were saved.
The article says that someone named Mrs. Clayton won regional and national cookie titles in 1977 for her cookie recipe. I decided to give it a try with some changes of my own.
